Deep beneath Casa Loma sits one of BlueBlood Steakhouse’s most unique spaces.

Built more than 120 years ago, the cellar’s naturally cool, controlled environment made it the perfect place for BlueBlood to establish its own in-house aging program. The space was lined with Himalayan salt to support the aging environment and today houses some of our most prized cuts.

Only Prime beef enters our cellar, where long-bone ribs, strip loins and ribeyes are aged for 35 days to develop exceptional depth of flavour and tenderness.
