This beer brings me way back to when I was younger, when I “wasn’t permitted” to drink beer but lattes with biscotti was a daily ritual.
This collaboration between and .ca brings every bit of that nostalgic feel for me. We used our espresso style roast of a natural Brazil for this brew. It’s delicious!

🚚 Hot off the truck!
With all the wild coffees out there these days, I wanted to bring in something more traditional and comfortable. I choose this refined, beautiful natural from Ethiopia produced by Gesha Village. The variety of this coffee is Illubabor forest and you can expect a big hit of complex berries, florals, grapes with a syrupy body.
This will ship out as part of the elite option on our site. Remember you can mix and match different options for as many bags as you need. You can choose biweekly or monthly subscriptions and cancel anytime. I’ll roast for you on Monday and Thursday. Boxes will go out at any point during the week. Stay caffeinated my friends ☕️

I’ve had the opportunity to roast on many new systems this past year including a Bideli sample roaster (pictured), the Ikawa Pro, Ghibli R-15 and Probat P12-3.
For those of you that don’t know, I moved out of my roastery at the beginning of 2022 looking for a new space to open a coffee shop with in-house roasting, plus so many other coffee infused products! Our Diedrich IR-5 roaster went into a one-year hiatus waiting for its next home. That new home is coming soon in Oakville ☕️☕️☕️ (swipe to see the space which is still under construction)
The lottery is a super fun roasting competition, organized by my pal Cole from Forward Coffee. It’s been fun this past year modulating roasts of mystery coffees while trying to learn different roasting systems 🤙🏼

New black IPA with coffee by my friends is delicious, complex and full of nuance. You can tell how excited I was for this beer with the pour. Couldn’t wait to dive into this one at the brewery 🤤
My approach with the Kenyan coffee used in this style of beer was to take the roast to a light degree aiming for a high level of sweetness while maintaining a thick and juicy mouthfeel. Also to try to match the same level of excellence Third Moon achieves with all their beers.
