Composed of just three equal parts — gin, sweet vermouth, and Campari — the Negroni is both simple in construction and complex in flavor, making it a favorite among bartenders and cocktail aficionados alike.
The Origins: A Count’s Request
The Negroni’s story begins in Florence, Italy, around 1919. As legend has it, Count Camillo Negroni, a well-traveled and charismatic figure, walked into Caffè Casoni (now Caffè Giacosa) and asked bartender Fosco Scarselli to strengthen his usual Americano — a light cocktail made of Campari, sweet vermouth, and soda water. Scarselli swapped the soda for gin, added an orange peel instead of lemon, and created what would soon become a classic.
The drink quickly caught on and became known as the “Negroni” in honor of the count. Its elegant bitterness and perfect balance made it a go-to aperitivo, and over time, it spread from Italy to bars all over the world.

At the Le Sélect Bistro we have one of the largest wine cellars in Canada, featuring over 1200 labels and offering a deep selection of French wines, along with bottles from other parts of Europe, South America, and Canada. The wine list is extensive, with a focus on French wines, including selections from Bordeaux, Burgundy, the Loire, and the Rhone regions, as well as offerings from the Italy, and Spain. Our cellar also houses vintage bottles dating back to the 1940s.

To reach the French restaurant on Wellington West in Toronto by public transport, take the TTC to Osgoode Station and then board the 501 Queen Streetcar heading westbound. Get off at Portland Street and walk two blocks north to reach your destination.
If you are driving, take the Gardiner Expressway to Spadina Avenue and head north. Turn left onto King Street West and then turn right onto Portland Street. Turn left onto Wellington West and the restaurant will be on your right. There is street parking available nearby or a paid public parking lot at 111 Bathurst Street.
