I want to highlight the Ukrainian volunteers, young women wise beyond their years who inspire me every day I am in Warsaw.

Meet Maria. She is from Ivano-Frankivs in Ukraine and was studying languages (English and German) at her local university before she was displaced by the war. This experience has led her to the realization that her true passion lies in illustration, and she hopes to study art in Canada. (If anyone I know has ideas that can help make her dream come true, please reach out!).

She shared with me some of the illustrations she has been working on over the past few months. This unfinished series speaks to her conscious decision to use technology in a way that positively impacts her life. Yes, technology and social media can be fraught with pitfalls, but she has chosen pragmatism even as she's had to leave her friends and family and bravely push onward amidst chaos and uncertainty.

"We are strong and independent women" - and 's response that brought a smile on my face as I wondered aloud whether we needed help carrying the bags and bags of groceries we'd amassed.

Standing behind the information desk, you don't notice the young children clinging onto their mother's legs until they walk away. I can't begin to imagine how terrified the children must be as their parents try their best to stay strong and put on a brave face. With the help and encouragement of Polina and Maria, my partners-in-crime and translator extraordinaires, both students displaced from Ukraine and awaiting their Visas to Canada, I decided to put on a dessert making class to hopefully put a smile on the faces of children and their mothers. A big thank you to for helping make this class a reality!

Dreams do come true 💫

Today's the day I make my first official appearance on The Food Network! I couldn't be more honoured to be sitting next to, sharing with, and learning from culinary experts I've looked up to for as long as I remember.

We laughed, we cried, and we ate. We witnessed the passion and GROWTH in these home bakers as they persevered through the very real and unexpected challenges that presented themselves. Process, process, process - it's all about the process, and there were no easy decisions!

I'll be watching these bakers and dreamers at 10pm on - you can also stream through or the app. Who's in??
