The Edgar & White is a negroni riff named after an inside joke between two of our charming bartenders.
It features the delicious and earthy Espadín Mezcal. We lean into its tropical notes with homemade guava vermouth and add RinQuinQuin and Luxardo Bitter Bianco to provide some crucial sweetness and bitterness.
And, of course, in the spirit of Quetzal we finish it off with a tincture made from our nixtamalized heirloom corn, which features heavily throughout our menu.
It’s 𝘤𝘭𝘦𝘢𝘳𝘭𝘺 destined to become a guest favourite!

What people say
Mexican cuisine is known for its bold and vibrant flavors, and Quetzal Toronto on College Street does not disappoint. This Mexican restaurant offers a diverse range of dishes that showcase the customs and flavors of Mexico. What sets Quetzal apart is their unique cooking method - all their dishes are cooked over a 28, which adds an extra layer of smokiness to the food.
One thing that makes Quetzal Toronto stand out is their commitment to creating a warm and inviting atmosphere for their guests. They have the biggest fireplace in Toronto, which makes it the perfect spot to cozy up during cold weather. The restaurant also hosts special events like New Year's Eve dinners and Series cardholders' dinners, where renowned chefs come together to create unforgettable feasts.
Quetzal's attention to detail extends beyond their events and ambiance - they also prioritize using high-quality ingredients in their dishes. For instance, they use masa made from ground corn that has been soaked in an alkaline solution of calcium hydroxide, which enhances its flavor.
Overall, Quetzal Toronto is a must-visit for anyone looking for authentic Mexican cuisine with a twist. From the unique cooking method to the warm atmosphere and high-quality ingredients, this restaurant has everything you need for an unforgettable dining experience.
