Anyone in the mood for making (skillet/muffin) cornbread as the weather gets a little chillier?
*mix available for purchase Janelle's Kitchen & Wanda's Pie in the Sky !

Ingredients:
2 large eggs
2 cups of milk
6tbs crisco melted
1/2 cup fresh/frozen corn
3 1/2 cups of SA Corn Bread Mix
9 inch cast iron pan (oiled)

DIRECTIONS:
-Pre heat oiled cast iron pan at 450 degrees
-Beat eggs and milk until well combined
-Add melted crisco mix well
-Add fresh/frozen corn
-In a separate large mixing bowl add the SA Cornbread Mix. Make a "well" in the centre and add the wet ingredients and mix until well combined
-Remove the cast iron pan from the over and turn the oven down to 375 degrees
-Pour the batter into the pan (should fill half of the pan) and bake in the oven for 15 mins, then turn down to 300 degrees for another 15 minutes or until golden brown. Insert a knife/toothpick into the centre of the bread, it should come out clean, with no streaks of batter
-Serve warm with butter

*For an extra treat after its all cooled down, you can cut the cornbread into wedges and fry them in in butter to make them nice and crispy!

*For CORNBREAD MUFFINS just use batter in muffin tins (makes ~12-24 depending on depth, we made ours very shallow)
