Somewhere between the south of France and the coastal region of Haiti you get this dish from the last edition of Racine Supper Club.
Pan-seared snapper fillets on top of silky confit peppers and a spicy Kreyol Sauce. Served with pikliz and fennel herb salad.
I’ve played with the idea of this dish over and over again and it’ll probably change slightly the next time I serve it but that’s the beauty of these supper clubs. The opportunity to create freely and take a dish from my mind to the plates.

My version of Pomme Fondant is one of the dishes that paints the exact picture of what I’m trying to accomplish with the Racine supper club. The classic French dishes I learned to cook at the beginning of my career were reinforced and reimagined with the Afro-Caribbean flavours of my childhood.
