Welcome to the Bed!
These two new beauty bivalves come to us from grower Sarah Matheson from Matheson Oyster Company a female owned and family operated business in Gloucester, VA.
Matheson Oyster Co. is an homage to Sarah’s late parents who left them with a lasting impression of taking care of the planet, community and each other.
THE OYSTERS:
🦪 Wavelengths: a 3.5” Select Oyster with a salty and sweet flavour, grown in Mobjack Bay.
🦪 Birthday Girls: 3” Cocktail Oyster their salty sweet notes are a little more concentrated than the Wavelengths also grown in Mobjack Bay.

WILD BC STEELHEAD IS HERE. 🐟
Tonight we’re putting some super special Wild BC Steelhead Trout on the menu, these fish are a by-catch from Skeena River Sockeye Test Fishery in BC. This fishery is required to keep them to better monitor and understand wild stocks.
And they’re BIG Fish, farmed Steelhead typically max out around 6–8 lbs… these absolute units average around 10 lbs.
There are only be a few hundred caught in a year, making this a seasonal and rare treat!
Come and try it while you still can 🐟

WILD BC STEELHEAD TROUT is on the menu tonight!
These fish come from the Skeena River Sockeye Test Fishery in BC - they a by catch from this Sockeye Salmon Fishery and not commercially fished anywhere else but by catching and keeping these fish helps with testing and studying stocks.
There’s only a few hundred caught per year.
Cultured (farmed) Steelhead are typically 6-8lbs max - these bad boys are 10lb average. 🐟

The Oyster House will be CLOSED for lunch Sunday, July 19th, due to us hosting the ONTARIO OYSTER SHUCKING FESTIVAL at the corner of King and Spadina. *460 King St. West
Feel like joining? 🎟️ tickets will be available at the door for entry and all things Oyster.
At the Oyster House- Chief Elaine will be holding down the ship and opening our doors at 4pm for you crazy Oyster fiends who feel like a few bivalves, seated at a table, on this beautiful day.

For the first time in the history of OOF, competitors will be shucking both East & West Coast Oysters bringing Canada’s best Oyster Regions together on the plate.
This competition draws the Best Pro Shuckers in the province to compete for the title of Ontario’s Oyster Shucking Champion! The win takes them to Tyne Valley to compete at the Canadian Oyster Shucking Championships, and this year it will also take them to CHINA to compete in the China Shuck Off 2027 Invitational!
