Nico took over his family’s farm, Catalan de Las Mercedes () in Chimaltenango, Guatemala, at a young age and has been quietly doing incredible things ever since. With a background in agricultural engineering, he separates every lot by variety and obsesses over his processing — and it shows. This year we’re proud to offer two distinct coffees from the farm: Catalan Natural and Catalan Red Bourbon.

Our co-founder Andy first met Nico judging at the Cup of Excellence Guatemala in 2012 and was hooked from the first sip. More than a decade of direct trade later, this remains one of our most treasured partnerships — built on friendship, shared values, and a mutual love of exceptional coffee.

Three fragrant recipes inspired by the season in between — some iced, some hot, and made to your taste:

With lychee-infused espresso and a raspberry garnish.

Choose espresso, matcha, or hojicha.

Heritage Coffee Jelly ☕🤎 Made with Heritage Instant Coffee, this one’s simple, nostalgic, and surprisingly elegant. Think bold coffee flavour, soft wobbly texture, and just the right touch of sweetness.

Save this post and check out the recipe below ✨

You will need:
- 2–3 packets Heritage Instant Coffee
- 500ml hot water
- 1–2 tbsp sugar (to taste)
- 1 packet Knox Gelatine (about 7g)
- 2 tbsp cold water
- Cream or condensed milk to serve

1. Empty the coffee packets into a jug and pour over the hot water. Stir until fully dissolved
2. Add sugar and mix to your liking
3. In a small bowl, sprinkle the Knox gelatine over the cold water and let it bloom for 5 minutes
4. Gently warm the coffee mixture if needed, then stir in the bloomed gelatine until completely dissolved
5. Pour into a shallow dish or moulds
6. Refrigerate for 3-4 hours, or overnight, until set and perfectly wobbly
7. Slice into cubes or spoon into glasses, top with cream if you like, and enjoy ☕🍮

IT'S ANA SORA DAY. 🍓 Our last release of '23 is our most anticipated. Ana Sora is a private estate in Ethiopia's Guji Zone owned by Israel Degfa. His heirloom coffees grow at soaring high altitude which slows maturation to a crawl and creates intense fruit complexity.

To lean into that complexity, it's been naturally processed and roasted on the lightest end of our spectrum.

This fruit bomb has earned it's reputation as the most adventurous coffee we source.

To get to Wagstaff Drive in Toronto using public transport, you can take the TTC subway and get off at Pape Station. From there, transfer to the 72B bus and get off at Carlaw Ave at Eastern Ave. Walk south on Carlaw Ave, cross over Lakeshore Blvd, and continue until you reach Wagstaff Drive.

If you are driving, take the Gardiner Expressway eastbound and exit at Lake Shore Blvd E. Turn left onto Carlaw Avenue and continue until you reach Wagstaff Drive. There is street parking available near the café.
