Please pop in for Ruby's last shift with us Friday afternoon (May 22nd).
After four years with us, we say goodbye to Ruby's musicality, her behind the bar dances, her kind gentleness, her eclectic fashion sense, and her rejection of the trappings of technology. We wish her continued success on stage and in all her many artistic pursuits.
Don't be a stranger Ruby!

Today's lesson: Why the grind size matters.
You can buy beans whole or ground, but when going to your local coffee roaster, you'll most likely need to get it ground - if you don't have a grinder. The baristas will ask you a few questions: What machine do you use/ how many cups...
The reason? There's no "one grind size fits all," like the preground coffee bags might let you think.
You see, every brewing method has a different grind size, simply to bring a different aspect of your coffee into the light (fruitiness, texture, oils, strength).
Depending on your method of choice, too fine might clog your device and prevent the water from going through. Or at the opposite, the grounds might go through and leave sediments in your cup, of course affecting the taste, and probably making it on the bitter side.
If too coarse, the water will go through too fast, leaving you with a weak and possibly acidic cup of coffee.
In the next lesson, we will explain where your brewing method is on the scale of grind sizes to help you get the best of your coffee and how to fix an "off" taste with it.
P.s. Coming soon : our blog about coffee knowledge ! Stay tuned !

We ordered a safety cover for our roaster's cooling tray from . We sent them the model and serial number of our machine. We could have had a custom cover manufactured locally but decided to go to the OEM as they should know their equipment best.
The safety cover arrived but does not fit our machine. We cannot use the machine with the safety cover in place. We can't close the roaster drum door and can't use the cooling tray. When I contacted Toper, they didn't take any responsibility and told us to fix it ourselves. Now we are forced to find a local manufacturer to fix this cover at our own expense. In retrospect we should have sourced it locally in the first place.
If you are in the market for a coffee roaster that has solid after sales support, then I suggest you avoid Toper

On a Monday morning, in dear need of caffeine - almost on the bridge of sanity, I decide to make myself a cup of coffee with my espresso machine - not the quietest but not the worst either (I thought).
Well, 30 minutes, a grumpy partner came out of the bedroom boring a hole into my soul, asking why I was renovating the kitchen so early. Can you imagine my surprise??
I was speechless and also not ready to give them explanations, I had just drank 3 sips of coffee, pretty far from being in my "sociable state" yet..
All of this to say, if you want to save yourself this type of situation, we have single-serve coffee bags. They are the quietest, both for your partner and your peace of mind, no more drama at 7 am. Plus, they are delicious π
For your sake, let them sleep.
