Most people don’t know this — Indo-Chinese food didn’t come from China.

Chinese immigrants landed there hundreds of years ago. Their cooking mixed with Indian spices and techniques. Something completely new was born.
I studied in Calcutta for 3 years. I ate Indo-Chinese food every week. And I always said — one day I’m bringing this to Toronto.

In 2014, I was working at a 5-star hotel in Bangalore.
My chef asked me — what do you want to learn next?
I said Indian food.
Everyone thought that was strange. I was already trained in Italian, Mediterranean, French cuisine. But I knew I was coming to Canada. And I knew if I was going to cook Indian food here — I was going to learn it properly.
That’s where I learned Madras chicken.
South Indian. Bold. A recipe that doesn’t exist anywhere else in Toronto.
I brought it with me. It’s on our menu now.
