My mom used to get frustrated with me in the kitchen.
Every day she cooked. Every day I told her — less salt, more spice, could be better.
She finally said: “Why don’t you just cook it yourself then.”
So I did.
At 17, my college sent me to a ski resort in Colorado. I was cooking for people on top of a mountain. That’s when I knew this was my life.
I trained in 5-star hotels across India. I worked in a Michelin-starred kitchen at the Four Seasons in Toronto. I was a head chef for 4 years before I opened Koshaa.
I came to Toronto with one goal — to show this city what Indian food actually tastes like when someone who trained their whole life for it is the one making it.
My name is Ushmeet. I am the chef. I am the owner. And I cook every sauce in this kitchen from scratch.

Our customers kept coming back.
Same dishes. Same faces. Same love.
And then they started asking — “Ushmeet, what else can you make?”
So for one year, I worked on an answer.
A new Indo-Chinese section — inspired by 3 years I spent studying in Calcutta, the birthplace of Indo-Chinese cuisine.
A wine list curated by a sommelier, paired specifically with our dishes.
A raw green mango margarita — made from scratch in this kitchen.
Mocktails built here. Nothing from a bottle.
I am a certified chef with over 15 years of experience. I didn’t add anything to this menu because it was trending. I added it because I knew I could do it right.
The new Koshaa menu is here.

Toronto has hundreds of Indian restaurants.
Not one of them has this on the menu.
Dilli Walli Palak Patta Chaat — crispy spinach, tamarind chutney, green chutney, yogurt, chaat masala. Built layer by layer, the way they make it on the streets of Delhi.
I brought it to the waterfront in Etobicoke.

Most people don’t know this — Indo-Chinese food didn’t come from China.
It came from Calcutta.
Chinese immigrants landed there hundreds of years ago. Their cooking mixed with Indian spices and techniques. Something completely new was born.
I studied in Calcutta for 3 years. I ate Indo-Chinese food every week. And I always said — one day I’m bringing this to Toronto.
That day is now.
Cauliflower Crunch. Honey Hot Garlic Chicken. On the menu at Koshaa.
