Lomo Saltado is one of the best examples of Peru’s cultural fusion — born from the influence of Chinese cooking techniques brought by Cantonese immigrants to Peru in the late 1800s.
The smoky wok flavor, quick stir-fry technique, and soy-based sauce blended with Peruvian ingredients created what is now one of the country’s most loved comfort dishes.
At Nuna, we keep that tradition alive while adding our own modern touch.

Ají de Gallina is back.
This was one of the hardest dishes to place on our menu. It’s deeply comforting, nostalgic, and full of homemade soul — so the challenge was: how do we give it the Nuna touch while respecting its roots?
We removed it for a while, but after hearing from our community and the love for more traditional Peruvian comfort dishes, we knew it had to return. And now, it’s back for the summer.
What makes it even more special is that the recipe comes from Chef’s mom — bringing real family tradition to every plate.
Rich, creamy, comforting, and deeply satisfying. If you love parmesan, this dish will be your favourite.

Our Beef Short Rib first appeared on the menu as a special feature, but after becoming a standout favourite during Winterlicious, it quickly earned its place as one of our best-selling dishes—right alongside our ceviche.
